Picture this: it is 2 pm on a Sunday afternoon and it is grey outside. You have been in your pyjamas since you woke up and you are starting to feel a little guilty about it. You haven’t really accomplished anything but you haven’t been enjoying your day either.
Or, maybe it is Wednesday afternoon and you have been staring at your computer for an hour but you are not getting any work done.
I am telling you, when you are having one of those blahh days where you could just sit around and do nothing these matcha energy bites are no joke.
Not only is this recipe easy and fun to make, but a couple of these bad boys will also give you the energy kick you need to get off the couch, get out of your funk and start being productive honeyyyy.
So what is in these bites that makes them so great? Let me break it down for you.
- Chia Seeds: Omega 3’s, high-quality protein, antioxidants, fibre.
- Almond Flour: gluten-free,
sourceof protein, super yummy.
- Matcha Green Tea: antioxidants, energy, caffeine. My favourite Matcha is the Organic Matcha From Tea Sakao which you can order from their website HERE!
- Coconut oil: Provides energy to the brain, good fat burner, yummy.
- Maple Syrup: It is maple syrup people.
If you are not convinced by now that these No-Bake Matcha Energy Bites are THE BOMB then let me try to convince you with one last pitch: they only take 10 minutes to make.
Yes, you heard me right! You can whip these up when you get home from work, right before you jump in the shower or even on the go if you are feeling REALLY ambitious ( I have never tried this but I imagine there would be matcha powder everywhere).
If you are not convinced by now that you need these snack bites in your life, I just don’t know what else to tell you, man. So, without any further delay or rambling about how much I love them, here is the recipe for my No- joke, No-bake, Matcha Energy Bites!
No Joke, No Bake, Matcha Energy Bites
- 1 1/2 tsp Organic matcha green tea powder
- 1/2 cup Almond flour
- 1/4 cup Almonds chopped
- 1/2 cup Coconut flakes sweetened
- 1/2 tbsp Organic black chia seeds
- 1 1/2 tbsp Extra virgin coconut oil melted
- 1 tbsp Pure maple syrup
Begin this recipe by preparing your ingredients. Chop your almonds into very small slices/chunks and pop your coconut oil in the microwave for about 20 seconds or until it is liquefied.
Combine all dry ingredients in a bowl and mix well.
Next, slowly add in the coconut oil while stirring the dry ingredients until well combined.
Add in your maple syrup and mix well. At this point, your mixture should become sticky and thick and you should be able to roll it into small balls. If it is still too dry, add a bit more coconut oil until it sticks together well, keeping in mind that you may have to press them together with your fingers.
Form your mixture into small bites that are slightly smaller than the size of a ping-pong ball.
Place your energy bites on a lined baking sheet and pop them in the freezer for at least an hour or until set.
Keep frozen or refrigerated and enjoy this delicious kick of energy!
Make sure to use care when adding the Matcha Powder into the dry ingredients as it can stain your clothing.
